Ingredients
- 2 Cup rolled oats - 2 (cups)
- 1 Cup unsweetened applesauce - 1 (cup)
- 3 Tablespoon maple syrup - 3 (tablespoons)
- 0.5 Cup water - 1/2 (cup)
- 2 Tablespoon vegetable oil - 2 (tablespoons), Use 1 tablespoon to grease the muffin tin and the remaining 1 tablespoon in the oat mixture.
- 1 Teaspoon baking powder - 1 (teaspoon)
- 1 Teaspoon ground cinnamon - 1 (teaspoon)
- 0.25 Teaspoon salt - 1/4 (teaspoon)
- 1 Count apple, finely diced - 1 (medium), Dice into small pieces for easier chewing.
- 0.75 Cup blueberries - 3/4 (cup)
Instructions
Preheat and prep the tin
1. *Preheat the oven to 375°F* and *grease the muffin tin* with 1 tablespoon vegetable oil; *finely dice the apple* if not already prepared.
Mix wet ingredients
2. In a mixing bowl, *stir together* the applesauce, maple syrup, water, and remaining 1 tablespoon vegetable oil until *smooth and blended*.
Add dry ingredients
3. Add the rolled oats, baking powder, cinnamon, and salt; *mix until evenly coated* and let the mixture *sit for 2 minutes* to soften slightly.
Fold in fruit and portion
