Ingredients
- 2 Cup rolled oats - 2 cups (180 g), 180 g total
- 1 Count ripe banana - 1 large (about 120 g), about 120 g
- 1 Cup frozen blueberries - 1 cup (140 g), 140 g total
- 3 Cup unsweetened soy milk - 3 cups (720 ml), 720 ml total
- 0.25 Cup creamy peanut butter - 1/4 cup (64 g), 64 g total
- 2 Tablespoon brown sugar - 2 tablespoons (25 g), 25 g total
- 1 Teaspoon ground cinnamon - 1 teaspoon
- 1 Teaspoon vanilla extract - 1 teaspoon
- 0.13 Teaspoon fine salt - 1/8 teaspoon
Instructions
Mash banana and mix liquids
1. In a large microwave-safe bowl, *mash the banana* with a fork until mostly smooth, then *stir in the soy milk*, peanut butter, brown sugar, cinnamon, vanilla, and salt.
Add oats and blueberries
2. Add the *rolled oats* and *frozen blueberries*, stirring until the oats are fully covered with liquid.
Microwave and stir
3. Microwave uncovered on high for *3 minutes*, then *stir carefully* from the edges toward the center.
Finish microwaving
4. Microwave on high for *1 to 2 minutes more* until the oats are *creamy and bubbling*, watching closely to prevent overflow.
Rest and serve
5. Let stand for *1 minute*, then *stir again* and serve warm.
