Berry Yogurt Oat Parfaits
A simple vegetarian Wednesday breakfast parfait with Greek yogurt, rolled oats, blueberries, strawberries, and honey. It is healthy, no-cook, kid-friendly, and sized for two adults and two children.

Ingredients
- 3 Cup Plain Greek yogurt - 3 (cups)
- 1 Cup Rolled oats - 1 (cup)
- 1 Cup Fresh blueberries - 1 (cup), rinsed
- 1 Cup Strawberries, hulled and sliced - 1 (cup), Hulled and sliced before layering.
- 0.25 Cup Honey - 1/4 (cup)
- 0.5 Cup Milk - 1/2 (cup)
- 1 Teaspoon Vanilla extract - 1 (teaspoon)
- 0.5 Teaspoon Ground cinnamon - 1/2 (teaspoon)
- 2 Tablespoon Chia seeds - 2 (tablespoons)
Instructions
Prepare the berries
1. *Rinse the blueberries* and *hull and slice the strawberries* on a cutting board.
Mix the yogurt and oats
2. In a mixing bowl, *stir together the Greek yogurt, milk, vanilla, cinnamon, and chia seeds* until smooth, then *fold in the rolled oats*.
Rest briefly
3. Let the yogurt-oat mixture sit for *5 minutes* so the oats *soften slightly*.
Layer the first half
4. Divide half of the yogurt-oat mixture among 4 serving cups, then *add a layer of berries* and *drizzle with a little honey*.
Finish the parfaits
5. Add the remaining yogurt-oat mixture, then *top with the remaining berries* and *finish with the remaining honey*.
Serve
