Ingredients
- 2 Cup frozen sweet cherries - 2 cups
- 2 Cup seedless watermelon, cubed and frozen - 2 cups, Cubed and frozen in a single layer until firm before blending.
- 0.75 Cup plain Greek yogurt - 3/4 cup
- 0.25 Cup rolled oats - 1/4 cup, Blended into a fine oat powder before the remaining smoothie bowl ingredients are added.
- 1 Tablespoon honey - 1 tablespoon
- 0.5 Teaspoon vanilla extract - 1/2 teaspoon
- 0.13 Teaspoon kosher salt - 1/8 teaspoon
- 0.5 Cup granola - 1/2 cup
- 0.25 Cup shelled pistachios, chopped - 1/4 cup, chopped
Instructions
Cube and freeze watermelon
1. *Cut the watermelon into cubes* if needed, then *freeze in a single layer* until firm, at least *4 hours*.
Powder the oats
2. Add the *rolled oats* to the blender and blend until they become a *fine oat powder*, about *20 seconds*.
Load the blender
3. Add the *plain Greek yogurt*, *frozen sweet cherries*, frozen watermelon, honey, vanilla extract, and kosher salt to the blender.
Blend until thick
4. Blend on low, then increase to medium, using a spatula as needed to help the mixture move until it is *very thick and spoonable*, about *1 to 2 minutes*.
Check texture
5. Stop blending once the bowl has a *soft-serve texture* and *holds its shape* on a spoon; do not thin it with extra liquid.
Portion into bowls
6. Divide the mixture between serving bowls and *smooth the tops* with the back of a spoon.
Add toppings and serve
7. Top with *granola* and *chopped pistachios*, then serve immediately while *cold and thick*.
