Ingredients

  • 1 Can Canned chickpeas, drained and rinsed - 1 (15-ounce can), drained and rinsed
  • 2 Each Ripe avocados - 2 (medium), Medium avocados; flesh used in the filling.
  • 4 Each Large flour tortillas - 4 (10-inch tortillas), 10-inch tortillas.
  • 4 Cup Romaine lettuce, chopped - 4 (cups), chopped
  • 1 Cup Cherry tomatoes, halved - 1 (cup), halved
  • 0.5 Cup Plain hummus - 1/2 (cup)
  • 1 Tablespoon Lemon juice - 1 (tablespoon)
  • 1 Teaspoon Olive oil - 1 (teaspoon)
  • 0.25 Teaspoon Fine salt - 1/4 (teaspoon)
  • 0.13 Teaspoon Ground black pepper - 1/8 (teaspoon)

Instructions

  1. Drain the chickpeas

    1. Drain and rinse the chickpeas, then place them in a medium mixing bowl.

  2. Add the filling ingredients

    2. Add the avocado flesh, lemon juice, olive oil, salt, and black pepper to the bowl.

  3. Mash the filling

    3. Mash with a fork until the mixture is mostly creamy with some chickpeas left partly whole.

  4. Spread the hummus

    4. Spread 2 tablespoons of hummus over each tortilla, leaving a 1-inch border.

  5. Add the chickpea-avocado filling

    5. Divide the chickpea-avocado mixture evenly among the tortillas.

  6. Add the vegetables

    6. Top each tortilla with chopped romaine lettuce and halved cherry tomatoes.

  7. Roll and serve

    7. Fold in the sides of each tortilla, roll tightly into wraps, and cut in half before serving.
