Ingredients

  • 1 Can Canned chickpeas, drained and rinsed - 1 can (15 ounces), drained and rinsed

  • 0.33 Cup Celery, finely chopped - 1/3 cup, finely chopped
  • 2 Tablespoon Green onion, thinly sliced - 2 tablespoons, thinly sliced
  • 1 Tablespoon Lemon juice - 1 tablespoon
  • 0.25 Teaspoon Salt - 1/4 teaspoon
  • 0.25 Teaspoon Black pepper - 1/4 teaspoon
  • 8 Count Sourdough bread - 8 slices (about 12 ounces), About 12 ounces total for 8 slices.
  • 4 Count Cheddar cheese slices - 4 slices (about 4 ounces), About 4 ounces total for 4 slices.
  • 2 Tablespoon Unsalted butter, softened - 2 tablespoons, softened

Instructions

  1. Prepare the filling ingredients

    1. *Drain and rinse the chickpeas*, finely chop the celery, and thinly slice the green onion so the *filling ingredients are ready*.

  2. Mash and mix the chickpea filling

    2. In a medium bowl, mash the chickpeas with a fork until *mostly broken down* with some texture remaining, then stir in the mayonnaise, Dijon mustard, celery, green onion, lemon juice, salt, and black pepper until *creamy and combined*.

  3. Butter the bread and add filling

    3. Spread the softened butter on one side of each sourdough slice, then place 4 slices *buttered side down* on a work surface and divide the *chickpea filling* evenly over them.
