Ingredients
- 3 Count Granny Smith apples - 3 medium, Use 2 apples cored and chopped for the smoothie base and 1 apple thinly sliced for topping.
- 1.5 Cup Seedless green grapes - 1 1/2 cups, Freeze until solid before blending.
- 1 Cup Baby spinach - 1 packed cup
- 0.25 Cup Fresh mint leaves - 1/4 cup, Reserve 1 tablespoon for garnish and use the remainder in the bowl base.
- 1 Cup Plain Greek yogurt - 1 cup
- 1 Tablespoon Fresh lemon juice - 1 tablespoon, Use fresh lemon juice.
- 1 Tablespoon Honey - 1 tablespoon
- 0.5 Cup Ice cubes - 1/2 cup
- 0.5 Cup Plain oat granola - 1/2 cup
- 2 Tablespoon Shelled pistachios - 2 tablespoons
Instructions
Freeze the grapes
1. *Rinse and dry* the grapes, spread them on a parchment-lined baking sheet, and *freeze until solid* for at least *4 hours*.
Prep apples and mint
2. *Core and chop* 2 apples, *thinly slice* the remaining apple for topping, and reserve *1 tablespoon mint leaves* for garnish.
Load the blender
3. Add the chopped apples, frozen grapes, spinach, remaining mint, Greek yogurt, lemon juice, honey, and ice to the blender; *add the bowl base* and *secure the lid*.
Blend until thick
4. *Blend on low* for 15 seconds, then *blend on high* for 45-60 seconds, stopping to *scrape down the sides* until the mixture is *thick and spoonable*.
Adjust the texture
5. If the mixture looks too loose, *chill it in the freezer* for *5 minutes*, then *stir briefly* to restore a *scoopable texture*.
Serve with toppings
6. *Spoon into bowls* and *top immediately* with granola, sliced apple, pistachios, and reserved mint.
