Hummus Pita Lunch Box
A no-cook whole wheat pita lunch box with creamy hummus, mild vegetables, and crisp Gala apple slices. It is vegan, nut-free, peanut-free, and easy to pack for school.

Ingredients
- 4 Count Vegan whole wheat pita bread, free of milk, eggs, honey, lard, cheese - 4 (6-inch pitas), 6-inch pitas; free of milk, eggs, honey, lard, and cheese
- 1 Cup Vegan plain hummus, nut-free and peanut-free - 1 cup, Portioned 1/4 cup per serving into dip containers
- 1 Count Cucumber - 1 medium, Cut into 1/4-inch sticks
- 1 Cup Shredded carrots - 1 cup, shredded
- 2 Count Gala apples - 2 medium, Cored and sliced for lunch box portions
- 1 Tablespoon Lemon juice - 1 tablespoon, Used to help reduce browning on apple slices
- 0.13 Teaspoon Fine salt - 1/8 teaspoon, A tiny pinch is sprinkled over cucumber and carrots
Instructions
Wash and cut produce and pitas
1. *Wash the cucumber and apples*, then *cut the cucumber* into 1/4-inch sticks, *core and slice the apples*, and *cut the pitas* into kid-size wedges.
Toss apples with lemon juice
2. Add the apple slices to a small bowl, sprinkle with *lemon juice*, and *toss gently* to help reduce browning.
Portion the hummus
3. Spoon *1/4 cup hummus* into each dip container and *close tightly* to keep the lunch box neat.
Pack the lunch boxes
4. Divide the *pita wedges*, *cucumber sticks*, shredded carrots, and apple slices among the lunch boxes in separate sections.
Season and chill for packing
5. Sprinkle the cucumber and carrots with *a tiny pinch of salt*, then *pack with an ice pack* until lunchtime.
