Simple plant-based wraps with hummus, cucumber, carrots, and romaine for a quick vegetarian family lunch. This no-cook meal is easy to assemble and sized for two adults and two children.

Ingredients
- 4 Each Whole wheat tortillas - 4 (10-inch), 10-inch tortillas
- 1 Cup Plain hummus - 1 cup
- 1 Cup English cucumber, thinly sliced - 1 cup, thinly sliced
- 1 Cup Shredded carrots - 1 cup, shredded
- 2 Cup Romaine lettuce, chopped - 2 cups, chopped
- 1 Cup Red bell pepper, thinly sliced - 1 cup, thinly sliced
- 1 Tablespoon Lemon juice - 1 tablespoon
- 0.25 Teaspoon Ground black pepper - 1/4 teaspoon
- 0.13 Teaspoon Fine salt - 1/8 teaspoon
Instructions
Prep the fresh vegetables
1. *Wash and dry* the cucumber, romaine, and bell pepper, then *slice the cucumber and bell pepper* and *chop the romaine*.
Season the vegetables
2. In a small pile on the cutting board, *toss the cucumber, carrots, romaine, and bell pepper* with *lemon juice, salt, and pepper*.
Spread the hummus
3. Lay the tortillas flat and *spread 1/4 cup hummus* over each tortilla, leaving a *1-inch border* around the edges.
Fill and roll the wraps
4. Divide the vegetables evenly over the hummus, keeping the filling in the center, then *fold in the sides* and *roll tightly* into wraps.
Slice and serve
5. *Slice each wrap in half* for easier serving and *serve right away* for the best texture.
