Ingredients

- 1 Count ripe banana, peeled and sliced - 1 medium (120 g), About 120 g total.
- 1.5 Cup coconut water, chilled - 1 1/2 cups (360 ml), About 360 ml total; 1/4 cup is reserved for adjusting texture.
- 2 Tablespoon fresh lime juice - 2 tablespoons (30 ml), About 30 ml juice total; buy whole limes for juicing.
- 1 Teaspoon lime zest - 1 teaspoon (2 g), About 2 g zest total; buy whole limes for zesting.
- 2 Tablespoon fresh mint, packed - 2 tablespoons (6 g), About 6 g total; measured packed.
- 0.5 Cup ice cubes - 1/2 cup (70 g), About 70 g total.
Instructions
Prep the produce
1. *Rinse* the zucchini, lime, and mint; *trim and chop* the zucchini, peel and slice the banana, then zest and juice the lime.
Load the blender
2. Add *1 1/4 cups coconut water* and *fresh lime juice* to the blender, then add the zucchini, banana, mint, and lime zest; top with *frozen pineapple chunks* and *ice cubes*.
Blend until smooth
3. Blend on *low for 10 seconds*, then increase to high and blend until *smooth and sippable*, 45 to 60 seconds.
Adjust and serve
4. Check the texture; add the *reserved 1/4 cup coconut water* if needed, then *blend for 5 seconds* and serve immediately.
