Ingredients

  • 2 Can canned lentils, drained and rinsed - 2 (15-ounce cans), drained and rinsed
  • 4 Count vegan hamburger buns - 4 (buns)
  • 1 Can tomato sauce - 1 (8-ounce can)
  • 0.5 Cup yellow onion, finely chopped - 1/2 (cup), finely chopped
  • 0.5 Cup green bell pepper, finely chopped - 1/2 (cup), finely chopped
  • 0.25 Cup ketchup - 1/4 (cup)
  • 0.25 Cup water - 1/4 (cup)
  • 1 Tablespoon yellow mustard - 1 (tablespoon)
  • 1 Tablespoon olive oil - 1 (tablespoon)
  • 1 Teaspoon garlic powder - 1 (teaspoon)
  • 0.5 Teaspoon salt - 1/2 (teaspoon)
  • 0.25 Teaspoon ground black pepper - 1/4 (teaspoon)

Instructions

  1. Heat the oil

    1. Heat the olive oil in a large skillet over medium heat.

  2. Soften the vegetables

    2. Add the onion and green bell pepper. Cook for 4 minutes, stirring often, until softened.

  3. Add the sauce ingredients

    3. Stir in the lentils, tomato sauce, ketchup, water, mustard, garlic powder, salt, and black pepper.

  4. Simmer the filling

    4. Simmer for 10 to 12 minutes, stirring often, until thick and saucy. Lightly mash some lentils with the spoon for a thicker texture.

  5. Warm the buns

    5. Warm the vegan hamburger buns if desired.

  6. Assemble and serve

    6. Spoon the lentil mixture onto the buns and serve warm.
