  • 2 Tablespoon Cajun seasoning - 2 (tablespoons)
  • 5 Cup vegetable broth - 5 (cups)
  • 1 Can canned kidney beans, rinsed and drained - 1 (15-ounce can), rinsed and drained
  • 0.5 Teaspoon kosher salt - 1/2 (teaspoon), Plus more if needed for final seasoning.
  • 4 Cup cooked long-grain white rice - 4 (cups), Cooked before serving with the gumbo.

Instructions

  1. Prep vegetables and beans

    1. *Prep the vegetables* by dicing the yellow onion, green bell pepper, and celery; *slice the mushrooms*, mince the garlic, and rinse and drain the kidney beans.

  2. Make the roux

    2. Heat the vegetable oil in a large heavy pot over medium heat, then whisk in the flour until smooth; cook the roux, stirring often, until it is *deep golden brown* and smells *toasty*, about *10 to 12 minutes*.

  3. Cook the Cajun trinity
