Preheat the oven to 375°F and grease the muffin tin with 1 tablespoon vegetable oil; finely dice the apple if not already prepared.
Keep fingers curled away from the knife blade while finely dicing the apple.
In a mixing bowl, stir together the applesauce, maple syrup, water, and remaining 1 tablespoon vegetable oil until smooth and blended.
Add the rolled oats, baking powder, cinnamon, and salt; mix until evenly coated and let the mixture sit for 2 minutes to soften slightly.
Fold in the diced apple and blueberries gently, then spoon the mixture evenly into the 12 muffin cups.
Bake for 18 minutes until the tops look set and softly firm.
