- rolled oats-1/4 cup
- shelled pistachios-1/4 cup
- honey-1 tablespoon
- vanilla extract-1/2 teaspoon
- kosher salt-1/8 teaspoon
Cut the watermelon into cubes if needed, then freeze in a single layer until firm, at least 4 hours.
Use a stable cutting board and keep fingers clear of the knife while cutting watermelon.
Add the rolled oats to the blender and blend until they become a fine oat powder, about 20 seconds.
Add the plain Greek yogurt, frozen sweet cherries, frozen watermelon, honey, vanilla extract, and kosher salt to the blender.
Blend on low, then medium for 1–2 minutes until thick and spoonable. Use short bursts if the motor strains. Switch off and unplug before scraping; wait until the blades stop. Remove the spatula and secure the lid before restarting.
Keep fingers clear of the blender blades; use the rubber spatula only after the blender is turned off.
Blend frozen fruit in short bursts if the blender struggles to avoid overheating the motor.
Stop blending once the bowl has a soft-serve texture and holds its shape on a spoon; do not thin it with extra liquid.
Divide the mixture between serving bowls and smooth the tops with the back of a spoon.
Top with granola and chopped pistachios, then serve immediately while cold and thick.
