Cook this recipe
- frozen dark sweet cherries-2 1/4 cups
- seedless watermelon-1 cup
- plain Greek yogurt-1 cup
- avocado-1/2 medium
- granola-1/2 cup
- unsweetened shredded coconut-2 tablespoons
- fresh lime juice-1 tablespoon
- pure maple syrup-1 tablespoon
- fine sea salt-1/8 teaspoon
Cube the chilled watermelon and peel and pit the avocado before measuring the ingredients; keep the frozen dark sweet cherries frozen until blending.
Use a stable cutting board and keep fingers clear of the knife when cutting watermelon and avocado.
Add the watermelon, Greek yogurt, avocado, lime juice, maple syrup, and salt to the blender first, then add 2 cups frozen cherries on top.
Blend on low, then increase to medium, pausing to scrape down the sides as needed, until the mixture is thick, smooth, and spoonable.
Keep the blender lid firmly secured before turning on the motor.
Turn the blender off before scraping near the blades with a spatula.
If the bowl looks loose, blend in the remaining 1/4 cup frozen cherries a few tablespoons at a time until it forms soft mounds on a spoon; do not add extra liquid.
Keep the blender lid secured whenever the motor is running.
Divide the smoothie base between bowls, then top visibly with granola and sprinkle with shredded coconut.
Serve immediately with spoons while the bowl is cold and thick.
