Cook this recipe
- honeydew melon-2 cups
- plain Greek yogurt-1 cup
- lime-1 medium
- granola-1/2 cup
- unsweetened coconut flakes-2 tablespoons
- chia seeds-2 tablespoons
Peel, seed, and cube the honeydew, then zest and juice the lime.
Use a stable cutting board and keep fingers tucked away from the knife blade while peeling and cubing the melon.
Add the honeydew, Greek yogurt, lime juice, lime zest, and 1 tablespoon chia seeds to the blender. Blend until smooth and thick, stopping to scrape down the sides as needed.
Unplug the blender before scraping near the blades.
Let the mixture stand for 5 minutes so the chia seeds can thicken the bowl to a spoonable texture.
Spoon the mixture into serving bowls, then top with granola, coconut flakes, and the remaining 1 tablespoon chia seeds.
Serve immediately while the bowl is cold, thick, and crunchy.
