Halve the cherry tomatoes, measure the spinach and mozzarella, and crack the eggs into a bowl.
Wash hands before and after handling raw eggs.
Add the garlic powder, salt, and black pepper to the eggs, then beat until smooth with a fork.
Toast the bread slices in the toaster until golden and crisp, then place them on serving plates.

Heat the olive oil in a large nonstick skillet over medium heat, add the spinach and tomatoes, and cook for 2 to 3 minutes until the spinach is just wilted.
