Heat the oven to 400°F (200°C). Wash your hands and clean the work surface. Scrub the sweet potatoes under running water, dry them, and cut away any damaged areas. Pierce the skins several times with a fork and place the potatoes on a parchment-lined baking sheet.
Roast for 50–60 minutes, until completely tender and easily pierced through the center. Let cool until comfortable to handle, then split open and scoop out the flesh. Mash until smooth and measure exactly 1 cup (240 g) for the filling. Reserve any excess for another use. Spread the measured mash in a shallow bowl to cool until barely warm.
Reduce the oven temperature to 325°F (165°C). Line the base of the springform pan with parchment paper and secure the ring. Melt the butter in a small saucepan over low heat.
Combine the graham cracker crumbs, 2 tablespoons brown sugar, and melted butter. Stir until evenly moistened, then press firmly across the bottom of the prepared pan. Bake for 10 minutes, until fragrant and lightly golden. Set on a rack while preparing the filling.
Beat the softened cream cheese with the remaining 1 cup brown sugar on medium-low speed until smooth, about 2 minutes. Scrape the bowl and beaters thoroughly. Add the cooled sweet potato mash, sour cream, cinnamon, vanilla, and salt. Mix on low speed until evenly combined.
Use pasteurized dairy and keep the softened cream cheese unrefrigerated for less than 2 hours total.
Add the eggs one at a time, mixing on low speed just until each disappears into the batter. Scrape the bowl between additions. Avoid whipping in excess air, which can cause the cheesecake to puff and crack. Do not taste the raw batter.
Wash hands and clean utensils and surfaces after raw-egg contact; do not taste the uncooked filling.
Pour the filling over the crust and smooth the surface. Place the springform pan on the baking sheet to catch any butter drips. Bake on the middle rack for 70–85 minutes. The outer portion should look set, while the center 2–3 inches should wobble gently as one piece rather than ripple like liquid. Check the center with a clean instant-read thermometer; it should reach 160°F (71°C). If necessary, continue baking in 5-minute increments.
Turn off the oven and leave the cheesecake inside with the door propped slightly open for 30 minutes. Transfer to a wire rack and carefully run a thin knife around the inside edge to release the filling from the pan without removing the ring. Cool for another 60 minutes.
Refrigerate the cheesecake in its pan, loosely covered, for at least 6 hours, preferably overnight. Place it in the refrigerator within 2 hours of finishing baking; do not wait for it to become completely cold on the counter. Once fully chilled, cover tightly.
Refrigerate within 2 hours of finishing baking and keep at or below 40°F (4°C).
Release the springform ring and cut into 12 wedges. For neat slices, warm the knife under hot running water, wipe it dry, and clean it between cuts. Serve chilled without a topping.
Return served portions to refrigeration within 2 hours, or within 1 hour when temperatures exceed 90°F (32°C).
