Preheat the oven to 375°F and line a 12-cup muffin tin. Grate the zucchini and carrots, lightly squeeze the zucchini so it is not dripping, and chop the walnuts.
Keep fingertips clear of the box grater while grating the vegetables.
In a large bowl, whisk together the ground flaxseed, almond milk, maple syrup, and oil; let stand for 5 minutes to thicken slightly.
Stir in the grated zucchini and carrots until evenly coated, then fold in the rolled oats.
Add the whole-wheat flour, baking powder, cinnamon, and salt; fold gently just until no dry flour remains. Stir in the chopped walnuts.
Divide the batter evenly among the muffin cups, filling each about three-quarters full. Bake for 20 to 23 minutes, until the tops spring back and a toothpick comes out clean.
Use oven mitts when handling the hot muffin tin.
Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before storing for meal prep.
