Cook this recipe
- skinless salmon fillets-1 lb
- panko breadcrumbs-1 cup
- mayonnaise-1/2 cup
- lemon-1 each
- olive oil-1 tablespoon
- garlic powder-1 teaspoon
- paprika-1 teaspoon
- Dijon mustard-1 teaspoon
- fine salt-3/4 teaspoon
- black pepper-1/4 teaspoon
Pat the salmon dry, cut it into even 1-inch bites, then zest the lemon and squeeze 2 tablespoons lemon juice.
Keep the sharp knife angled away from fingers while cutting the salmon.
Wash hands, the cutting board, and the knife after contact with raw salmon.
Mix three-quarters of the mayonnaise with half the prepared lemon juice, all the zest and mustard; refrigerate the dipping sauce. Keep it separate from raw salmon and coating utensils.
Preheat the air fryer to 400°F per its instructions and mix the remaining mayonnaise and lemon juice with half the garlic powder and paprika, two-thirds of the salt and all the pepper.
Toss salmon in the seasoned mayonnaise; separately combine panko, oil and the remaining garlic powder, paprika and salt. Keep raw-contact utensils away from ready-to-eat food.
Avoid touching ready-to-eat items with utensils or hands that contacted raw salmon.
Press salmon into the panko and arrange in a single uncrowded basket layer. Refrigerate uncooked portions while each batch cooks.
Discard any leftover panko mixture that touched raw salmon.
Air fry at 400°F until golden and the thickest bites reach 145°F, about 7–8 minutes per batch. Turn halfway through and continue as needed, then transfer to a clean plate. More batches take extra time.
Use tongs when turning hot salmon bites in the air fryer basket.
Cook salmon to an internal temperature of 145°F in the center.
Serve hot with chilled lemon-Dijon sauce and discard coating that contacted raw salmon. Serve each batch as it finishes for the crispest result.
