Heat the oven to 225°F (110°C), with a rack in the middle. Line the baking sheet with parchment paper. Rinse the cranberries under running water, discard damaged berries, and drain well.
Separate the eggs while cold, placing the whites in a clean, completely dry mixing bowl. Keep all yolk out of the whites. Cover and refrigerate the yolks promptly for another use. Wash your hands and any utensils that touched raw egg.

Add the lemon juice to the whites. Beat on medium speed until foamy, then increase to medium-high and beat until soft peaks form. Gradually add the 150 g sugar, about 1 tablespoon at a time, beating well between additions. Continue beating until the meringue is glossy, holds stiff peaks, and feels smooth rather than gritty when a little is rubbed between clean fingers.
Do not taste raw meringue; wash hands after the clean-finger texture check.
Spoon the meringue into six evenly sized mounds on the parchment, leaving at least 1 inch between them. Using the back of the spoon, shape each into a nest about 3 1/2 inches wide, with a shallow well and raised sides. Keep the base about 1/2 inch thick so it can support the filling.
Bake for 90–120 minutes, until the nests feel dry and firm and release easily from the parchment. They should remain pale; small cracks are normal. Check that the thickest part of a rim has reached at least 160°F (71°C). Turn off the oven, prop the door slightly open, and leave the nests inside for 1 hour, until completely cool. If a cooled nest is still tacky underneath, bake at 225°F (110°C) for another 15–20 minutes and cool again.
Use oven mitts for the hot baking sheet and take care when propping open the oven door.
While the nests bake, combine the cranberries, 65 g sugar, and 1/4 cup water in the saucepan. Bring to a simmer over medium heat, stirring to dissolve the sugar. Reduce the heat and simmer gently for 8–12 minutes, stirring occasionally, until most berries have burst and the compote is thick and spoonable rather than watery. It will thicken further as it cools.
Stir carefully to avoid splashes from the hot compote.
Transfer the compote to a shallow heatproof container. Let the heavy steam subside for about 15 minutes, then refrigerate until fully cold. Do not leave it at room temperature for more than 2 hours.
Handle the hot compote and container carefully, and refrigerate within 2 hours.
Shortly before serving, place the cold cream, remaining 15 g sugar, and vanilla in a clean mixing bowl. Whip on medium-high speed until medium peaks form: the cream should hold its shape while remaining smooth and soft.
Keep the cream refrigerated until just before whipping.
Divide all the whipped cream among the six completely cooled nests. Spoon the cold cranberry compote over the cream, dividing it evenly among all six portions. Serve immediately to preserve the crisp shells.
Refrigerate filled nests within 2 hours of assembly, or within 1 hour above 90°F (32°C).
