- vegan plain hummus-1 cup
- Gala apples-2 medium
- shredded carrots-1 cup
- cucumber-1 medium
- lemon juice-1 tbsp
- fine salt-0.13 tsp
Wash the cucumber and apples, then cut the cucumber into 1/4-inch sticks, core and slice the apples, and cut the pitas into kid-size wedges.
Keep fingers tucked away from the knife blade while cutting the cucumber, apples, and pitas.
Add the apple slices to a small bowl, sprinkle with lemon juice, and toss gently to help reduce browning.
Spoon 1/4 cup hummus into each dip container and close tightly to keep the lunch box neat.
Divide the pita wedges, cucumber sticks, shredded carrots, and apple slices among the lunch boxes in separate sections.
Sprinkle the cucumber and carrots with a tiny pinch of salt, then pack with an ice pack until lunchtime.
Keep the packed lunch boxes chilled with an ice pack until lunchtime.
