Preheat the oven to 425°F and line a rimmed sheet pan with parchment paper. Halve the baby bok choy lengthwise, thinly slice the scallions, and pat the salmon fillets dry.

Keep raw salmon separate from ready-to-eat scallions, and wash hands, the cutting board, and utensils after contact with raw salmon.

Keep fingers tucked and the knife blade angled away while cutting the bok choy and scallions.

In a small bowl, microwave the butter 5 to 10 seconds until easily mashable, then mix in the white miso paste, soy sauce, honey, and rice vinegar until smooth.

Use oven mitts when moving the hot sheet pan in and out of the oven.

Cook salmon to 145°F in the thickest part using a clean instant-read thermometer.

Use oven mitts and keep hands clear of steam when handling the hot sheet pan.
