- Pumpkin pie spice-1 teaspoon
- Vanilla extract-1 teaspoon
- Fine salt-0.13 teaspoons
Wash your hands with soap and water and use clean equipment. In the mixing bowl, whisk together the pumpkin puree, whole milk, maple syrup, pumpkin pie spice, vanilla extract, and salt until smooth.
Use pasteurized whole milk.
Gradually whisk in the chia seeds, distributing them evenly throughout the pumpkin mixture. Let stand for 10 minutes.
Whisk thoroughly again, reaching the bottom and sides of the bowl to break up any chia clumps. Divide the mixture evenly among the four serving containers and cover.
Refrigerate at 40°F (4°C) or below for at least 4 hours, preferably overnight, until chilled and thick enough to hold softly on a spoon.
Keep the pudding refrigerated at 40°F (4°C) or below until serving.
Stir each portion before serving. Divide the chopped pecans evenly among all four portions, using 1 tablespoon per portion, and serve chilled. Add the pecans only just before serving so they stay crisp.
Discard pudding left at room temperature for more than 2 hours, or more than 1 hour above 90°F (32°C).
