Cook this recipe
- Garlic-3 each
- Ground turkey, 93% lean-1 pound
- Water-17 1/2 cups
- Green cabbage-1 each
- Yellow onion-1 each
- Canned tomato sauce-3 cups
- Long-grain white rice-1/2 cup
- Olive oil-2 tablespoons
- Fine salt-1 teaspoon
- Sweet paprika-1 teaspoon
- Dried oregano-1 teaspoon
- Ground black pepper-1/2 teaspoon
Heat the oven to 375°F. Wash your hands and clean the work surface. Remove damaged outer cabbage leaves, rinse the cabbage under running water, and pat dry. Rinse and dry the onion before peeling and dicing it. Peel and mince the garlic. Carefully cut out the cabbage core, leaving the head intact.
Put the rice and 1 cup of the measured water in the small saucepan. Bring to a boil, cover, and reduce the heat to low. Cook for 15–18 minutes, until the water is absorbed and the rice is tender. Remove from the heat, leave covered for 5 minutes, then fluff and spread on a large plate to cool until no longer hot. This makes approximately 1 1/2 cups cooked rice; use the entire amount.
Lift the hot lid carefully, away from your face, to avoid steam burns.
Meanwhile, bring 16 cups of the measured water to a boil in the stockpot. Carefully lower in the cabbage, core-side down. Simmer for 3–5 minutes, then turn it with tongs and gently loosen the outer leaves. Remove leaves individually as they become flexible, returning any stiff leaves to the water for another 1–2 minutes. Continue until you have 12 large, pliable leaves. Drain and cool them in the colander. Reserve the remaining cabbage for another use.
Lower and turn the cabbage carefully with tongs to avoid splashes from boiling water.
Heat the olive oil in the skillet over medium heat. Add the onion and cook for 6–8 minutes, stirring occasionally, until softened. Add the garlic and paprika and cook for 30 seconds. Transfer to the mixing bowl and let cool until no longer hot.
Lay each cabbage leaf flat. With the knife held nearly parallel to the leaf, shave down the thick central rib without cutting through the leaf. This helps the cabbage fold without splitting.
Add the cooled rice, raw ground turkey, 3/4 teaspoon salt, 1/4 teaspoon pepper, and 1/2 teaspoon oregano to the onion mixture. Mix gently until evenly combined; do not compact the filling.
Keep raw turkey separate from the prepared vegetables and cooked rice, and wash hands after handling it.
In the now-empty skillet, stir together the tomato sauce, remaining 1/2 cup water, 1/4 teaspoon salt, 1/4 teaspoon pepper, and 1/2 teaspoon oregano. Spread 1 cup of this sauce mixture over the bottom of the baking dish.
Divide the filling evenly among the 12 cabbage leaves, using approximately 1/3 cup per leaf. Place the filling near the trimmed stem end, fold that end over the filling, fold in the sides, and roll up snugly without squeezing. Arrange seam-side down in a single layer in the baking dish.
Wash your hands and clean utensils and surfaces that touched the raw turkey. Pour all the remaining sauce over the rolls, coating their tops. Cover the dish tightly with foil.
Wash hands and clean utensils and surfaces that touched the raw turkey to prevent cross-contamination.
Bake for 75–90 minutes, until the cabbage is tender and the center of the turkey filling reaches at least 165°F (74°C). Check several rolls, including those in the center of the dish, by inserting a clean instant-read thermometer into the thickest part of the filling. If necessary, cover again and continue baking until both the temperature and tenderness are reached.
Use a clean thermometer to confirm the filling reaches 165°F (74°C), and open the foil away from your face to avoid steam.
Let the rolls rest, covered, for 10 minutes. Serve 3 rolls per person, dividing all the tomato sauce among the four portions.
