produce brushHeat the oven to 425°F and line a rimmed baking sheet with parchment paper. Wash your hands with soap and water. Scrub the sweet potatoes under running water, trim away any damaged areas, and dry them. Rinse the onion before peeling and dicing it. Mince the garlic, then drain and rinse the black beans.
Prick each sweet potato several times with a fork and place it on the baking sheet. Roast whole for 55–70 minutes, until a knife slides easily into the center and the potatoes feel soft throughout.
Use oven mitts when handling the hot baking sheet or potatoes.
Begin the filling during the final 30 minutes of roasting. Heat the olive oil in a large skillet over medium heat. Add the onion and cook for 5–6 minutes, stirring occasionally, until softened.
Increase the heat to medium-high and add the turkey. Cook for 8–10 minutes, breaking it into small pieces and allowing it to sit briefly between stirring so it browns. Wash your hands after handling the raw turkey. Before adding the beans and tomatoes, check several spots in the turkey with a clean food thermometer to confirm it has reached 165°F.
Keep raw turkey and its packaging away from prepared foods; wash hands and clean utensils and surfaces after contact.
Use a clean thermometer to confirm the turkey reaches 165°F before adding the beans and tomatoes.
Reduce the heat to medium. Stir in the garlic, cumin, chili powder, and salt, and cook for 30 seconds. Add the black beans and tomatoes with their juices. Simmer uncovered for 8–10 minutes, stirring occasionally, until the filling is hot and thick enough to mound rather than run. If it finishes before the potatoes, keep it over low heat, stirring occasionally, until ready to fill them.
Leave the oven on. Carefully cut a lengthwise slit in each tender sweet potato without cutting through the bottom. Using oven mitts to protect your hands, gently press the ends toward the center to open a pocket, keeping the potatoes whole and the flesh intact. Divide all the turkey filling evenly among the four potatoes, mounding it into and over the openings.
Use oven mitts when opening and filling the hot potatoes.
Divide the cheddar evenly among all four potatoes, using 1/4 cup per potato. Return the baking sheet to the oven for 3–5 minutes, until the cheese melts. Top each potato with 2 tablespoons of Greek yogurt and serve hot.
Use oven mitts when handling the hot baking sheet.
