- shredded carrots-0.5 cups
- water-2 tbsp
- low-sodium soy sauce-1 tbsp
- canola oil-2 tsp
- garlic powder-0.25 tsp
- onion powder-0.25 tsp
Rinse and drain the black beans, then add them to a microwave-safe bowl with the rice, peas, and shredded carrots.
Add low-sodium soy sauce, canola oil, water, garlic powder, and onion powder to the bowl, then stir gently until the rice and vegetables are evenly coated.
Cover the bowl loosely with a microwave-safe plate and microwave on high for 2 minutes until the mixture begins to steam.
Use only microwave-safe bowls and plates for this step.
Carefully remove the bowl, stir from the bottom, then microwave for 1 to 2 minutes more until the rice is hot and the peas are tender.
The bowl and steam will be hot; lift the cover away from your face and hands.
Let the mixture stand for 1 minute, then divide into 4 small cups and serve warm.
