Cook this recipe
- cremini mushrooms-1 lb
- yellow onion-1 large
- garlic-4 cloves
- vegetable broth-1 cup
- olive oil-2 tablespoons
- lime juice-1 tablespoon
- canned black beans-2 cans
- unsweetened canned coconut milk-1 can
- fresh thyme-2 teaspoons
- canned diced tomatoes-1 can
- ground allspice-1 teaspoon
- salt-1 teaspoon
Slice the mushrooms, dice the onion, mince the garlic, chop the thyme, and rinse and drain the black beans before cooking.
Keep knife blades pointed away from your hands while slicing mushrooms and dicing onion.
Heat the olive oil in a large Dutch oven over medium heat; add the onion and cook for 4 to 5 minutes, stirring until softened.
Use oven mitts if you need to move or steady the hot Dutch oven.
Add the garlic, ground allspice, and fresh thyme; cook for 30 seconds until fragrant.
Add the mushrooms and salt; cook for 7 to 9 minutes, stirring often, until the mushrooms release liquid and begin to brown lightly.
Stir in the black beans, coconut milk, vegetable broth, and diced tomatoes; bring the stew to a gentle boil.
Bring the stew up gently to reduce splattering from the hot coconut milk.
Reduce the heat to medium-low and simmer uncovered for 18 to 22 minutes, stirring occasionally, until the stew is thick and hearty.
Simmer gently to prevent hot coconut milk from splattering.
Stir in the lime juice, taste, and adjust seasoning if needed; serve hot when the stew is creamy, savory, and well combined.
