Cook this recipe
- tomato juice-4 cups
- canned lentils-2 cans
- English cucumber-1 each
- red bell pepper-1 each
- avocado-1 each
- grape tomatoes-1 cup
- red onion-1/4 cup
- lime juice-3 tablespoons
- extra-virgin olive oil-2 tablespoons
- ground cumin-1 teaspoon
- fine sea salt-1/2 teaspoon

Stir the tomato juice, lime juice, olive oil, cumin and salt together in a bowl large enough for the soup. Use at least 5-quart capacity at the base serving size; increase bowl capacity or divide the recipe for larger quantities.
Add drained lentils, cucumber, red bell pepper, grape tomatoes, and red onion; fold gently so the soup stays chunky and unblended.
Keep fingers tucked and the cutting board stable while dicing and quartering vegetables.
Divide into shallow covered containers and refrigerate until cold throughout, at 40°F or below. Allow about 2 hours, or longer as needed; use enough containers to keep the soup shallow.
Keep the soup refrigerated at 40°F or below if holding it longer than the brief chill time.
Dice the avocado just before serving and gently fold it into the chilled soup. Divide it evenly among the containers.
Use care when cutting and pitting avocado; keep the knife blade away from your hand.
Divide the soup and crackers evenly among servings. Use bowls large enough for these generous main-course portions.
