- dry spaghetti-8 oz
- broccoli florets-3 cups
- matchstick carrots-1.5 cups
- red bell pepper-1.5 cups
- green onions-0.5 cups
- low sodium soy sauce-0.25 cups
- water-0.25 cups
- canola oil-2 tbsp
- maple syrup-1 tbsp
- cornstarch-1 tsp
- ground ginger-0.5 tsp
- garlic-2 cloves
Bring a large pot of water to a boil. Cook spaghetti according to package directions, adding broccoli during the last 2 minutes of cooking.
Drain spaghetti and broccoli in a colander.
Use oven mitts when handling the hot pot, and let steam escape away from your face while draining.
In a small bowl, whisk low sodium soy sauce, water, maple syrup, cornstarch, and ground ginger until smooth.
Heat canola oil in a large skillet over medium-high heat. Add matchstick carrots and red bell pepper, then cook for 3 to 4 minutes, stirring often.
Turn the skillet handle inward to prevent bumps and spills.
Add garlic and cook for 30 seconds.
Add drained spaghetti, broccoli, and sauce to the skillet. Toss for 2 to 3 minutes until evenly coated and warmed through.
Stir in green onions and serve warm.
