Cook this recipe
- whole wheat tortillas-4 each
- romaine lettuce-2 cups
- plain hummus-1 cup
- shredded carrots-1 cup
- red bell pepper-1 cup
- English cucumber-1/2 cup
- lemon juice-1 tablespoon
- ground black pepper-1/4 teaspoon
- fine salt-1/8 teaspoon
Wash and dry the cucumber, romaine, and bell pepper, then slice the cucumber and bell pepper and chop the romaine.
Use a stable cutting board and keep fingers curled back while slicing vegetables.
Wash fresh produce well before cutting.
In a small pile on the cutting board, toss the cucumber, carrots, romaine, and bell pepper with lemon juice, salt, and pepper.
Lay the tortillas flat and spread 1/4 cup hummus over each tortilla, leaving a 1-inch border around the edges.
Divide the vegetables evenly over the hummus, keeping the filling in the center, then fold in the sides and roll tightly into wraps.
Slice each wrap in half for easier serving and serve right away for the best texture.
Keep fingers clear of the knife while slicing the assembled wraps.
