Cook this recipe
- cooked chicken breast-2 ounces
- mayonnaise-1 1/2 tablespoons
- celery-1 tablespoon
- unsalted butter-1 teaspoon
- store-bought white sandwich bread-2 slices
- fine salt-1 pinch
- strawberries-3 each
Finely chop the cooked chicken and celery so there are no large or hard pieces. Remove the strawberry tops, then quarter each strawberry lengthwise.
Use the small sharp knife carefully and keep fingers clear while chopping and quartering.
Stir the chicken, celery, mayonnaise, and salt together in the small bowl until evenly coated.
Spread the softened butter in a thin layer over one side of each bread slice to help prevent sogginess.
Spread the chicken salad evenly over the buttered side of one bread slice. Top with the second slice, buttered side facing the filling.
Cut the sandwich into 4 small squares. Pack the sandwich pieces with the quartered strawberries as the only side.
Keep the packed lunch chilled in an insulated lunch bag with a frozen ice pack.
Do not leave the sandwich at room temperature for more than 2 hours.
