Cook this recipe
- Canned chickpeas-1 1/2 cups
- Celery-1/3 cup
- Mayonnaise-3 tablespoons
- Fresh dill-2 tablespoons
- Fresh lemon juice-2 tablespoons
- lemon zest-1 teaspoon
- Dijon mustard-1 teaspoon
- Fine salt-1/4 teaspoon
- Ground black pepper-1/8 teaspoon
- Store-bought whole wheat sandwich bread-4 slices
Rinse and drain the chickpeas thoroughly. Finely dice the celery, chop the dill, and measure the lemon juice and zest.
Wash the celery, dill, and lemon before preparing them.
Place the chickpeas in the mixing bowl. Mash them with a fork until most are broken down but some small pieces remain for texture.
Add the celery, dill, lemon juice, lemon zest, mayonnaise, Dijon mustard, salt, and black pepper. Stir until evenly combined.
Refrigerate the chickpea salad within 2 hours of mixing, especially when using egg-based mayonnaise.
Divide the chickpea salad between 2 bread slices and spread it into an even layer. Top with the remaining bread slices, cut each sandwich in half, and serve promptly.
