- romaine lettuce-2 cups
- ripe avocado-1 each
- tomato-1 each
- mayonnaise-2 tbsp
- lemon juice-1 tsp
- fine salt-0.13 tsp
- ground black pepper-0.13 tsp
Wash and dry the romaine lettuce, slice the tomato, and halve, pit, and scoop the avocado into a small bowl.
Use a stable cutting board when slicing the tomato and avocado.
Cut around the avocado pit carefully and remove the pit with a spoon.
Add the lemon juice, salt, and black pepper to the avocado, then mash with a fork until creamy but slightly chunky.
Spread mayonnaise evenly over one side of each bread slice, then spread the mashed avocado over 2 of the slices.
Keep mayonnaise refrigerated until ready to use.
Layer the avocado-covered bread with crisp romaine lettuce and juicy tomato slices.
Top with the remaining bread slices, mayonnaise side down, then press gently and cut each sandwich in half.
Keep fingers clear of the knife blade while cutting the sandwiches in half.
