Cook this recipe
- baby potatoes-1 1/2 lb
- plant-based smoked sausage-12 oz
- fresh green beans-12 oz
- red bell pepper-1 large
- yellow onion-1 medium
- olive oil-3 tablespoons
- Dijon mustard-1 1/2 tablespoons
- garlic powder-1 teaspoon
- fine salt-3/4 teaspoon
- smoked paprika-1/2 teaspoon
- black pepper-1/4 teaspoon
Preheat the oven to 425°F and prepare enough rimmed sheet pans for single layers. At the base serving size, use two half-sheet pans, about 18 by 13 inches each. Allow air circulation; use more pans or batches when increasing servings.
Toss the potatoes and onion with two-thirds of the olive oil and Dijon, plus the garlic powder, paprika, salt and pepper. Spread across the pans in single layers, reserving room for the later ingredients.
Roast for 12 minutes.
Add the sausage, green beans and bell pepper; toss with the remaining olive oil and Dijon. Spread across the pans in single layers.
Use oven mitts when adding ingredients to the hot sheet pan.
Continue roasting until the potatoes are fork-tender and the sausage has received its package cooking and is hot throughout. Start checking after another 10–12 minutes. Rotate pans and swap rack positions as needed; the beans should be crisp-tender.
Make sure the plant-based sausage is heated through before serving.
Toss carefully and divide evenly among the servings.
Use oven mitts when handling the hot sheet pan.
