Prepare the oven and dish

Centered rimmed baking sheet with a raised edge on a neutral light background.Rimmed baking sheet
2-quart oven-safe soufflé dish

Wash your hands and clean the work surface. Position an oven rack in the lower third of the oven, leaving plenty of clearance above it, and preheat to 375°F. Coat the bottom and sides of the soufflé dish with 1 tablespoon of the softened butter. Place the dish on the baking sheet.

2

Prepare the salad and dressing

Prepare the salad before handling the eggs. Separate the lettuce leaves, discard damaged areas, and rinse the leaves under running water. Spin thoroughly dry, tear into bite-size pieces, and refrigerate in the salad bowl. In a small bowl, whisk together the olive oil, lemon juice, and the salad dressing’s 1/4 teaspoon salt. Set the dressing aside.

3

Grate the cheese and separate the eggs

Grate the cheddar. Place the egg yolks in one bowl and the whites in a large, clean, grease-free mixing bowl. Keep all traces of yolk out of the whites. Wash your hands after handling the raw eggs.

Wash hands after handling raw eggs, and clean egg-contact utensils and surfaces before they touch the ready-to-eat salad.

4

Cook the roux

Centered medium stainless-steel saucepan with one long handle on a light neutral background.Medium saucepan

Melt the remaining 4 tablespoons butter in the saucepan over medium-low heat. Whisk in the flour and dry mustard. Cook for 2 minutes, whisking continuously, until the roux is smooth and gently bubbling but has not browned.

5

Make the white sauce

Gradually whisk in the milk, adding a small splash first and whisking smooth before adding more. Increase the heat to medium and bring to a gentle simmer, whisking continuously. Cook for 3–4 minutes, until the white sauce is thick, glossy, and lump-free; the whisk should leave a brief trail across the bottom of the pan.

6

Add the cheese and egg yolks

Mixing bowls (one large, clean, grease-free)

Remove the saucepan from the heat. Stir in the cheddar in several additions until melted, followed by the remaining 1/2 teaspoon salt and the black pepper. Let cool for 5–8 minutes, until warm but no longer steaming. Whisk in the egg yolks one at a time, incorporating each completely. Transfer the mixture to a large mixing bowl.

Do not taste the mixture after adding the raw egg yolks.

7

Whip the egg whites

Generic electric hand mixer with two stainless-steel beaters, centered on a neutral light studio background.Electric hand mixer
Mixing bowls (one large, clean, grease-free)

Using clean, dry beaters, beat the egg whites on medium speed until foamy, then increase to medium-high. Stop when they form glossy, firm peaks: a lifted peak should stand upright with just a slight bend at its tip. The whites should not look dry or clumpy.

8

Fold the batter and fill the dish

Mixing bowls (one large, clean, grease-free)

Stir about one-quarter of the whites into the cheese mixture to lighten it. Fold in the remaining whites in two additions using the flexible spatula. Cut down through the center, sweep along the bottom, and lift the mixture over itself, rotating the bowl between strokes. Stop when no obvious white streaks remain. Scrape all the batter into the prepared dish and gently level the surface without pressing out the air.

9

Bake the soufflé

Immediately transfer the baking sheet and soufflé to the oven. Bake for 40–50 minutes. Keep the oven door closed for at least the first 35 minutes so the structure has time to set.

10

Dress and plate the salad

Large white ceramic salad bowl centered on a light neutral studio background.Large salad bowl

About 5 minutes before the expected end of baking, whisk the dressing again, toss it with the lettuce, and divide the salad among four plates.

Use clean hands and utensils, free of raw-egg residue, when tossing and plating the ready-to-eat salad.

11

Check the soufflé for doneness

Centered unbranded instant-read thermometer with a dark digital body and stainless-steel probe on a light neutral background.Instant-read thermometer
2-quart oven-safe soufflé dish

Check that the soufflé is well risen and deeply golden. The center should be set, with only a slight tremble rather than a liquid wobble. Insert an instant-read thermometer into the center; it must reach at least 160°F, with no liquid egg mixture remaining. If necessary, continue baking in 5-minute increments until these cues are met.

Clean the thermometer probe before and after checking the soufflé.

12

Serve immediately

2-quart oven-safe soufflé dish

Carefully remove the hot dish from the oven. Immediately spoon one-quarter of the soufflé onto each plate alongside the salad and serve.

Use heatproof protection when removing the hot dish from the oven.
