Cook this recipe
- boneless skinless chicken breasts-1 1/2 lb
- mozzarella cheese-1 1/2 cups
- fresh basil-1/4 cup
- olive oil-2 tablespoons
- garlic-4 cloves
- crushed tomatoes-1 can
- kosher salt-1 teaspoon
- baby spinach-5 oz
- Italian seasoning-1 teaspoon
- black pepper-1/2 teaspoon
Cut the chicken breasts into 4 even cutlets about 3/4 inch thick, then mince the garlic and chop the basil.
Use a clean cutting board and knife for raw chicken, and wash them before using them for ready-to-eat ingredients like basil.
Season the chicken with salt and pepper. Heat olive oil in the skillet over medium-high heat, then sear the chicken until golden, 3 to 4 minutes per side. Transfer to a plate.
Use caution with hot oil while searing to avoid splatter burns.
Wash hands and utensils after contact with raw chicken.
Reduce heat to medium. Add garlic and stir until fragrant, about 30 seconds. Add crushed tomatoes and Italian seasoning, scraping up browned bits from the skillet.
Return the chicken and juices to the skillet. Spoon sauce over the chicken, cover, and simmer gently until the chicken reaches 165°F in the thickest part, 8 to 10 minutes.
Cook chicken to an internal temperature of 165°F in the thickest part.
Keep the sauce at a gentle simmer to reduce hot tomato sauce splatters.
Scatter spinach around the chicken and stir it into the sauce until just wilted, 1 to 2 minutes.
Sprinkle mozzarella over the chicken. Cover and cook over low heat until the cheese is melted and creamy, 2 to 3 minutes. Top with basil and serve.
