- mozzarella cheese-8 oz
- romaine lettuce-4 cups
- cherry tomatoes-2 cups
- cucumber-1.5 cups
- olive oil-2 tbsp
- lemon juice-1 tbsp
- dried oregano-1 tsp
- fine sea salt-0.5 tsp
- black pepper-0.25 tsp
Rinse and dry the produce, then halve the cherry tomatoes, chop the romaine, and dice the cucumber and mozzarella.
Use a stable cutting board and keep fingers tucked while cutting.
In a small bowl, stir together the olive oil, lemon juice, dried oregano, salt, and black pepper until the dressing is evenly mixed.
In a large bowl, combine the mozzarella, cherry tomatoes, cucumber, and romaine, then toss gently with the dressing.
Cut each pita in half and carefully open each half into a pocket.
Keep fingers clear of the knife while cutting and opening the pitas.
Fill the pita pockets with the tomato mozzarella mixture and serve immediately for the best texture.
