Cook this recipe
- sourdough bread-4 slice
- cherry tomatoes-1.5 cups
- cannellini beans-1 can
- fresh basil-0.25 cups
- extra-virgin olive oil-2 tbsp
- lemon juice-1 tbsp
- garlic powder-0.5 tsp
- fine salt-0.5 tsp
Rinse and drain the cannellini beans in a colander, halve the cherry tomatoes on a cutting board, and chop the fresh basil.
Wash the cherry tomatoes and fresh basil before cutting.
Keep fingers clear of the knife blade while halving tomatoes and chopping basil.
In a medium mixing bowl, combine the beans, tomatoes, olive oil, lemon juice, garlic powder, and salt; gently mash about half the beans with a fork, then fold in the basil.
Toast the sourdough slices until crunchy and golden, about 3 to 5 minutes.
Use caution when removing hot toast from the toaster.
Spoon the tomato white bean mixture over the toasts, pressing lightly so it holds, and serve while the bread is still crisp.
