Cook this recipe
- canned cannellini beans-2 cans
- vegan whole wheat sandwich bread-6 slices
- cherry tomatoes-2 cups
- English cucumber-1 large
- baby arugula-5 oz
- red onion-1/2 cup
- fresh basil-1/2 cup
- extra-virgin olive oil-1/4 cup
- red wine vinegar-3 tablespoons
- Dijon mustard-1 tablespoon
- fine sea salt-3/4 teaspoon
- ground black pepper-1/2 teaspoon
In a small bowl, whisk the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until smooth and fully blended.
Toss the beans, tomatoes, cucumber, onion and basil gently with half the dressing. Use a mixing bowl with room for the bread and greens; at least 5-quart capacity is suitable at the base serving size.
Gently fold in the soft bread pieces just before serving, only until their surfaces are moistened. Proceed directly to the final toss so the bread holds its shape.
Add the arugula and remaining dressing, toss gently and serve immediately. Divide evenly among servings.
Refrigerate the dressed bean mixture and arugula separately, keeping the bread separate until serving. Refrigerate assembled leftovers within two hours.
Keep prepared components refrigerated if holding for later, and refrigerate leftovers within 2 hours.
