Cook this recipe
- vegetable broth-4 cups
- yellow onion-1 small
- carrots-2 medium
- celery stalks-2 stalk
- garlic-2 cloves
- broccoli florets-4 cups
- canned cannellini beans-2 cans
- olive oil-1 tablespoon
- lemon juice-1 tablespoon
- salt-0.75 teaspoons
- ground black pepper-0.13 teaspoons
Dice the onion, carrots, and celery, mince the garlic, chop the broccoli into small florets, and rinse and drain the cannellini beans.
Use a stable cutting board and keep fingers clear of the knife while chopping vegetables.
Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery, then cook for 4 minutes until the vegetables start to soften.
Stir in the garlic and cook for 30 seconds until mildly fragrant.
Add the vegetable broth, cannellini beans, salt, and black pepper. Bring to a gentle boil, then reduce to a simmer and cook for 8 minutes.
Add the broccoli, cover the pot, and simmer for 6 to 7 minutes until the broccoli is bright green and tender.
Keep children away from the hot pot and lift the lid away from you to avoid steam burns.
Use a potato masher to mash some beans and broccoli directly in the pot until the soup looks lightly creamy but still chunky.
Mash gently to avoid splashing hot soup.
Stir in the lemon juice, then taste and adjust only if needed. Serve warm in kid-friendly portions.
Let the soup cool for a few minutes before serving to children and check that broccoli pieces are soft enough to chew easily.
