Steps
- Prepare the sauce ingredients. Wash your hands and clean the work surface. Rinse and dry the lemons and parsley. Squeeze and measure 1/4 cup lemon juice, chop the parsley, and drain and rinse the capers. Cut the 4 tablespoons of sauce butter into small pieces and keep them refrigerated.
- 1/4 cup lemon juice
- 2 tablespoons flat-leaf parsley — chopped
- 3 tablespoons capers — drained and rinsed
- 1/4 cup butter
- Boil the water and prepare the cutlets. Bring the 4 quarts of water to a boil in the large pot. Meanwhile, on a separate cutting board from the prepared produce, slice each chicken breast horizontally into 2 thin cutlets. Place the cutlets between sheets of plastic wrap and gently pound to an even 1/4-inch thickness. Do not rinse the raw chicken. Wash your hands and clean the knife, board, and work surface after handling it.
- 4 quarts Water
- 1 1/2 pounds chicken breast
Keep raw chicken separate from produce and wash hands, the knife, board, and work surface after handling it.
- Season and lightly dredge the chicken. Season both sides of the chicken with the allocated 1 teaspoon salt and the pepper. Put the flour in a shallow dish. Lightly dredge each cutlet, shaking off excess flour so only a thin coating remains. Discard the flour left in the dish.
- 1 1/2 pounds chicken breast
- 1 teaspoon salt
- 1/2 teaspoon Ground Black Pepper
- 1/3 cup all-purpose flour
Discard flour that has contacted raw chicken; do not reuse it.
- Pan-fry the cutlets in batches. Heat 1 tablespoon olive oil and 1 tablespoon frying butter in the skillet over medium-high heat. When the butter foams, add 2 cutlets without overlapping. Cook for 2–3 minutes per side, until golden, adjusting the heat if the butter begins to darken excessively. Transfer to the holding plate. Repeat with the remaining olive oil, remaining frying butter, and remaining 2 cutlets. The chicken will finish cooking in the sauce.
- 1 1/2 pounds chicken breast
- 2 tablespoons olive oil
- 2 tablespoons butter
- Cook the spaghetti and reserve water. As the second batch cooks, add the remaining 3 teaspoons salt and the spaghetti to the boiling water. Stir and cook according to the package timing until al dente. Before draining, measure out 1/2 cup pasta cooking water. Continue making the sauce while the spaghetti cooks.
- 1 tablespoon salt
- 12 ounces spaghetti
- Deglaze and reduce the pan sauce. After removing the second batch of chicken, lower the skillet heat to medium. Add the chicken broth carefully and scrape up the golden browned bits with the wooden spoon. Simmer for 3–5 minutes, until reduced to approximately 1 cup. Stir in the lemon juice and capers, then reduce the heat to low.
- 1 1/2 cups chicken broth
- 1/4 cup lemon juice
- 3 tablespoons capers — drained and rinsed
Pour broth carefully into the hot skillet to avoid splashing.
- Add the butter and finish the chicken. Add the cold sauce butter a few pieces at a time, swirling the skillet until it melts into a smooth sauce. Return the chicken and any collected juices to the skillet. Gently simmer for 1–3 minutes, spooning sauce over the cutlets, until each reaches 165°F in its thickest part. Insert the thermometer sideways into the thin cutlets for an accurate reading. Avoid a vigorous boil.
- 1/4 cup butter
Use a clean thermometer to confirm every cutlet reaches 165°F.
- Coat the spaghetti in sauce. Transfer the cooked chicken to four serving plates. Add the drained spaghetti and the reserved 1/2 cup pasta water to the skillet. Toss over low heat for 30–60 seconds, until the pasta is coated and the sauce looks glossy.
- Divide, garnish, and serve. Divide the spaghetti and all remaining sauce among the four plates. Sprinkle the total 2 tablespoons parsley evenly over all four portions and serve immediately.
- 2 tablespoons flat-leaf parsley — chopped
Notes
Thin, evenly pounded cutlets cook quickly and stay tender. A light flour coating helps the sauce cling without creating a heavy crust.
Golden skillet drippings add flavor, but blackened bits taste bitter. If any bits burn, carefully remove them before adding the broth.
The sauce should be loose enough to coat the spaghetti generously; it will thicken slightly as the pasta sits. Serve promptly for the best texture.
Cooking safety
Keep raw chicken and its juices separate from prepared produce. Wash utensils that touched raw chicken before using them for cooked food.
Clean the thermometer before and after use, and confirm that every cutlet reaches 165°F.
Refrigerate leftovers in shallow, sealed containers within 2 hours of cooking, or within 1 hour when the temperature is above 90°F. Keep at 40°F or below, use within 3–4 days, and reheat to 165°F.
