- canned chickpeas-1 can
- large flour tortillas-4 each
- ripe avocados-2 each
- romaine lettuce-4 cups
- cherry tomatoes-1 cup
- plain hummus-0.5 cups
- lemon juice-1 tbsp
- olive oil-1 tsp
- fine salt-0.25 tsp
- ground black pepper-0.13 tsp
Drain and rinse the chickpeas, then place them in a medium mixing bowl.
Add the avocado flesh, lemon juice, olive oil, salt, and black pepper to the bowl.
Use a stable cutting board and keep the knife angled away from your fingers when cutting avocados.
Mash with a fork until the mixture is mostly creamy with some chickpeas left partly whole.
Spread 2 tablespoons of hummus over each tortilla, leaving a 1-inch border.
Divide the chickpea-avocado mixture evenly among the tortillas.
Top each tortilla with chopped romaine lettuce and halved cherry tomatoes.
Use a stable cutting board when cutting tomatoes.
Fold in the sides of each tortilla, roll tightly into wraps, and cut in half before serving.
Keep fingers clear of the knife blade when cutting the wraps in half.
