Drain and rinse the chickpeas, finely chop the celery, and thinly slice the green onion so the filling ingredients are ready.

Keep fingers tucked and the knife blade angled away while chopping the celery and green onion.

In a medium bowl, mash the chickpeas with a fork until mostly broken down with some texture remaining, then stir in the mayonnaise, Dijon mustard, celery, green onion, lemon juice, salt, and black pepper until creamy and combined.

Spread the softened butter on one side of each sourdough slice, then place 4 slices buttered side down on a work surface and divide the chickpea filling evenly over them.

Top each sandwich with 1 cheddar cheese slice and the remaining bread slices, keeping the buttered sides facing out and pressing gently to hold the sandwiches together.

Heat a large skillet or griddle over medium heat. Add the sandwiches in a single layer, working in batches if needed, and cook for 3 to 4 minutes per side until the bread is golden brown and the cheddar is melted.
