Cook this recipe
- low-sodium vegetable broth-4 cups
- yellow onions-2 each
- garlic cloves-4 cloves
- Yukon Gold potatoes-2 pounds
- cremini mushrooms-8 ounces
- canned cannellini beans-2 cans
- extra-virgin olive oil-2 tablespoons
- dried thyme-1 teaspoon
- dried bay leaves-2 each
- kosher salt-1 teaspoon
- ground black pepper-1/2 teaspoon
Prep the vegetables: scrub and slice the potatoes, slice the onions and mushrooms, mince the garlic, and rinse and drain the cannellini beans.
Cut potatoes, onions, and mushrooms on a stable cutting board with dry hands.
Heat the olive oil in the large pot or Dutch oven over medium heat. Add the onions and 1/2 teaspoon salt, then cook 7 to 9 minutes, stirring often, until soft and lightly golden.
Add the garlic, mushrooms, dried thyme, and black pepper. Cook 6 to 8 minutes, stirring occasionally, until the mushrooms release their liquid and begin to brown.
Add the potatoes, cannellini beans, vegetable broth, bay leaves, and remaining 1/2 teaspoon salt. Bring to a gentle simmer, scraping the bottom of the pot, and keep the potatoes mostly submerged.
Keep the stew at a gentle simmer to reduce splashing and prevent scorching.
Cover, reduce the heat to low, and simmer gently 30 to 35 minutes until the potatoes are fork-tender and the broth tastes savory and hearty.
Use potholders when handling the hot covered pot, and open the lid away from your face to avoid steam.
Remove the bay leaves. Mash a few potatoes and beans against the side of the pot, then simmer uncovered 3 to 5 minutes until the coddle is lightly thickened.
Stir and mash gently to avoid splashing hot stew.
