Cook this recipe
- red potatoes-2 lb
- yellow onion-6 oz
- celery-2 large stalks
- apple cider vinegar-1/2 cup
- water-1/4 cup
- fresh parsley-1/4 cup
- extra-virgin olive oil-3 tablespoons
- Dijon mustard-2 tablespoons
- granulated sugar-1 tablespoon
- fine salt-1 1/2 teaspoons
- black pepper-1/2 teaspoon
Wash the red potatoes, finely dice the yellow onion and celery, and chop the fresh parsley before cooking.
Keep the knife blade angled away from fingers while dicing and chopping.
Place the potatoes in a large pot, cover with cold water by 1 inch, and bring to a boil. Cook until fork-tender, about 15 to 20 minutes depending on size.
Drain the potatoes and let them cool just until easy to handle, about 5 minutes. Slice into 1/4-inch thick rounds while still warm.
Use caution when draining boiling water and keep steam away from your hands and face.
Let the potatoes cool slightly before slicing to avoid burns.
In a small saucepan, combine the apple cider vinegar, water, Dijon mustard, sugar, salt, and black pepper. Warm over medium heat, whisking until the sugar dissolves, about 2 minutes.
Put the warm sliced potatoes in a large bowl and pour the hot vinegar-mustard dressing over them. Gently fold until the potatoes begin to absorb the dressing.
Pour the hot dressing slowly to reduce the chance of splashes.
Add the diced yellow onion and celery, then drizzle in the olive oil. Fold gently to keep the potatoes mostly intact and make the salad glossy and well coated.
Let the salad stand for 10 minutes so the flavors soak in, then fold in the fresh parsley. Serve warm or at room temperature.
Do not leave the salad at room temperature for more than 2 hours.
