Cook this recipe

  • Water-1.75 cups
  • Basmati rice-1 cup
  • Ghee-1 tablespoon
  • Cumin seeds-1 teaspoon
  • Fine salt-0.5 teaspoons
1
Rinse and drain the rice
Fine-mesh strainer

Wash your hands with soap and water. Place the basmati rice in a fine-mesh strainer and rinse under cool running water, gently moving the grains with your fingers, until the water runs mostly clear. Drain thoroughly for about 2 minutes. Do not soak the rice for this method.

2
Toast the cumin in ghee
Saucepan
Wooden spoon

Heat the ghee in the saucepan over medium heat. Add the cumin seeds and cook for 30–45 seconds, stirring, until they sizzle, smell fragrant, and darken slightly. Do not let them turn black.

1 Tablespoon ghee
1 Teaspoon cumin seeds
3
Coat the rice with ghee
Saucepan
Wooden spoon

Add the drained rice carefully, as residual moisture may cause some sputtering. Stir gently for 1 minute to coat the grains with the cumin-scented ghee without breaking them.

Add the damp rice carefully to reduce splatter from the hot ghee.

1 Cup basmati rice
4
Add water and bring to a boil
Saucepan
Measuring cups and spoons
Wooden spoon

Add the measured water and salt. Stir once, then bring to a steady boil over medium-high heat.

1 3/4 Cup Water
1/2 Teaspoon salt
5
Cover and cook the rice
Saucepan

Cover immediately and reduce the heat to its lowest setting. Cook for 15–18 minutes without stirring or lifting the lid. At 15 minutes, check briefly: the water should be absorbed, small steam holes should appear on the surface, and the rice should be tender. If water remains, cover and cook for the remaining 3 minutes.

Open the lid carefully and keep your face and hands clear of escaping steam.

6
Rest the rice covered
Saucepan

Remove the saucepan from the heat and leave it covered for 10 minutes. This rest lets moisture distribute evenly and helps the grains stay separate.

7
Fluff and serve
Saucepan
Fork

Lift the lid away from your face. Gently fluff the rice with a fork, lifting rather than pressing the grains. Serve warm alongside dal, a vegetable curry, and plain yogurt.

Lift the lid away from your face to avoid hot steam.
