Rinse the rice until the water runs mostly clear. Slice the carrots into thin rounds, cut the tofu into 1-inch cubes, and pat the tofu very dry with paper towels.

Keep fingers tucked and the knife blade angled away while slicing carrots and cubing tofu.

In a medium saucepan, combine the rice and 2 cups water. Bring to a boil, reduce heat to low, cover, and cook for 18 minutes until the rice is tender and the water is absorbed.

Heat 1 tablespoon canola oil in a large nonstick skillet over medium-high heat. Add the tofu and cook for 8 to 10 minutes, turning occasionally, until lightly browned on several sides.

Cook tofu in a single layer when possible to reduce splattering from the hot oil.

Transfer the tofu to a plate. Add the remaining 1 tablespoon canola oil to the skillet, then add the broccoli and carrots. Cook for 5 to 6 minutes, stirring often, until the vegetables are bright and crisp-tender.
