Cook this recipe
- yellow potatoes-1 lb
- leeks-1 lb
- carrots-12 oz
- green cabbage-12 oz
- parsnips-10 oz
- turnips-10 oz
- low-sodium vegetable broth-8 cups
- olive oil-2 tablespoons
- dried thyme-1 teaspoon
- bay leaves-2 count
- fine salt-1 teaspoon
- ground black pepper-1/2 teaspoon
Prepare the vegetables as listed: weigh the potatoes, carrots, parsnips, and turnips, then cut them to the stated sizes; slice and rinse the leeks well, and chop the cabbage.
Wash sliced leeks thoroughly because dirt often hides between the layers.
Keep knife tips pointed down and fingers tucked when cutting firm root vegetables.
In a large soup pot, warm the olive oil over medium heat, then add the leeks and salt; cook for 5 minutes until softened.
Add the potatoes, carrots, parsnips, turnips, thyme, bay leaves, and black pepper; stir to coat and cook for 2 minutes.
Pour in the low-sodium vegetable broth, bring to a boil, then reduce to a steady simmer; cook for 20 minutes until the root vegetables are almost tender.
Simmer gently to prevent hot broth from splashing.
Stir in the green cabbage and simmer for 10 to 15 minutes, until the cabbage is tender and the potatoes are soft in the center.
Stir hot soup slowly to avoid splashing broth.
Remove the bay leaves, taste the broth, and serve hot in bowls.
Use care when ladling hot soup into bowls.
