Heat the oven to 425°F and prepare two 18-by-13-inch trays with parchment rated for that heat. Put racks in upper and lower thirds. Cut tempeh and onion into 1-inch pieces and squash into 3/4-inch cubes; halve Brussels sprouts, quartering large ones.
Keep fingers tucked and the knife blade angled away while cutting the tempeh, Brussels sprouts, and onion.
In a large mixing bowl, whisk together the olive oil, maple syrup, Dijon mustard, apple cider vinegar, garlic powder, kosher salt, and black pepper until smooth and glossy. Add the tempeh, Brussels sprouts, butternut squash, and red onion and toss to coat well.
Spread the coated tempeh and vegetables in uncrowded single layers across the pans. Place Brussels sprouts cut-side down where possible.
Roast until the squash is nearly tender before adding pecans, starting to check after 25 minutes. Stir, rotate trays front to back and swap rack positions; test squash with a fork.
Use oven mitts when removing and handling the hot sheet pan.
Add pecans and roast until squash is fork-tender, sprouts browned and tempeh crisp at the edges. Start checking after another 5–8 minutes and watch the nuts early to prevent burning.
Use oven mitts when returning the hot pan to the oven or removing it again.
Rest for 2 minutes, then share all the tempeh, vegetables and pecans evenly. Allow about fifty-five minutes overall, longer if squash needs more cooking.
Let the hot pan rest briefly before serving to reduce the risk of burns.
